Opening the Wines

We hear you about vintages 2009 and 2010.  How do you get through the wax and not make a mess?

First, do NOT try to cut off the wax.  Insert the corkscrew and turn it through the wax and into the cork.  Go in as deep as possible.

Begin to pull up and the wax will break cleanly.

There it is - almost out!

Let us share with you that since we hand-dipped every bottle in wax ourselves, we were learning and the wax is a bit too thick.  In that case, score around the top edge of the wax with a knife (but do NOT cut off) and then use the wine opener as shown above and it will be a breeze.

A bit about decanting here.
